Prosciutto and Asparagus Plate

Prosciutto wrapped asparagus over a bed of arugula with supreme cut orange segments, toasted pistachios, shaved parmesan cheese and Marzetti Simply Lemon Vinaigrette.

Blanche Asparagus in boiling water.

Roll 3 asparagus spears into each  prosciutto slice.

To segment the orange “supreme style”, cut the top and bottom off the orange and then cut the rind off the sides by following the curve of the orange. Then slice the orange and set aside.

In a medium bowl, combine arugula, pistachios and orange sections and toss with ¾ cup Marzetti Simply Lemon Vinaigrette.

Divide the arugula salad between 4 plates and place 2 of the prosciutto asparagus wraps each.

Shave fresh parmesan Reggiano over the salads.

Top with fresh ground black pepper and serve immediately.
