Bacon Stout Cheese Chips

Kettle chips with bacon, Guinness Stout cheese sauce, scallions, and Marzetti Simply Blue Cheese Dip.




Bacon Stout Cheese Sauce Ingredients

On a large serving plate, layer the chips, blue cheese and bacon, top with hot Bacon Stout Cheese sauce, more bacon and the scallions.

Place the Marzetti Simply Blue Cheese Dressing in a side bowl and place with the chips for dipping.

Serve immediately.  Keep Bacon Cheese sauce warm. Start another batch. Or drizzle blue cheese dressing over top.


Bacon Stout Cheese Sauce Preparation

In a medium sauce pan over medium heat, heat the bacon grease.  Make a roux by adding flour to the bacon grease while whisking for about 3-4 minutes. Add the Guinness and whisk briskly to incorporate into the roux.

Slowly add the half & half while continuing to whisk the sauce. Reduce the heat to low.

Add the Velveeta and stir until it melts into the sauce. Add in cheddar and stir until combined.

Add the sugar, salt and pepper.  Remove from the heat and add the blue cheese crumbles.

Stir until smooth and creamy.
