Loaded Potato Salad
Redskin potatoes, crispy bacon, and sharp cheddar cheese tossed in Marzetti Simply Ranch Dressing and topped with grated hard-boiled eggs and fresh cut chives.
Serves 4
In a large bowl add the red skin potatoes, bacon, cheddar cheese and Marzetti Simply Ranch Dressing . Mix gently, making sure to keep the matchstick potatoes from breaking.
Arrange in four side bowls or one large dish. Using a hand-held grater, grate the hard-boiled eggs over each bowl. Top with more bacon, cheddar cheese and the chopped chives. Serve immediately.
